Today, saffron is known as a versatile plant that has been used all over the world.

The red stigmas of the saffron flower are located among its purple petals, and if your hand touches it, its fragrance will remain for several days.

Saffron is a plant that grows through saffron bulbs. The bulb of this plant has a brown straw that protects it. After the bulb is planted, it begins to grow and form a stem at the end of which a bud is formed. 

After flowering, you will encounter a purple flower with 6 beautiful petals that protect the 3 red stigmas. These three red stigmas are the same delicious substance that is prepared with great effort.

Regarding the other name of saffron in the sources, it is said that saffron or Zaffron is Arabic or modified “Zarparan”, it is also an ancient Persian word for the saffron plant “Kurkum.”

Although there are some doubts about the origin of saffron, by examining the history of saffron, we conclude that the place of origin of saffron in Iran. At present, about 80% of world saffron production belongs to Iran.

The provinces of Khorasan Razavi and South Khorasan have the largest share in the production of Iranian saffron with an 85% share. Qaen County saffron is one of the highest quality saffron produced in the country and Qaen County is known as the saffron capital of the world.

Saffron has compounds that distinguish this valuable plant from other plants. The quality of saffron is measured through these compounds in laboratories. The higher the percentage of these compounds, the higher the quality of saffron and therefore has a greater impact on the properties of saffron.

Saffron is cultivated in some other provinces of the country, including North Khorasan, Yazd, Golestan, Hamedan, Fars, and Isfahan, where the share of saffron production, in general, is less than 10%.

From the quantitative point of view of Torbat Heydariyeh in Khorasan Razavi province with a sub-ship area of ​​7500 hectares of saffron among all producers of this product, the first rank of production in the drawer has Saffron of Ferdows, Sarayan and Qaen are considered as one of the highest quality saffron produced in the country.

Gonabad saffron has also been registered in the FAO as a world agricultural heritage due to its traditional planting and irrigation with aqueduct water.

Recently, the development of saffron cultivation and production in northern Khorasan has increased so that from 343 hectares with a production of about 6 Tons in 2007 reached the level of nine thousand 850 hectares and production of about 29 tons this year.
